About 2.5 km east of Castelnau-de-Guers, in the heart of the pines, this small chapel preserves the memory of a place much older than itself. The site is attested as early as 1106 under the name Ecclesiam S. Nicholay de Talpussiac. Archaeological surveys carried out in 1992 also revealed nearby the remains of a rural settlement from late antiquity, testifying to an ancient occupation of the area. The current chapel, with an oblong plan, is much more recent: it was consecrated in 1819 and is now disused. It is located on the edge of the fishmonger's path (cami peissonier), an ancient route connecting the Étang de Thau area to Pézenas.

In the heart of old Florensac, the Saint-Jean-Baptiste church preserves the side chapels of the former Romanesque church. The current building was partially rebuilt in the 15th century, then remodeled in the 17th century after the destruction of the Wars of Religion. Above all, you must look around: the narrow alleys and old houses from the 15th to the 18th centuries correspond to the old heart of the fortified village. The medieval enclosure had four gates; the Porte d'Agde, still visible, is one of the last remaining examples. On this square, there is also a stone cross that was once located on the edge of the Via Domitia. Moved in 1997, it serves as a reminder that Florensac lies in an area traversed by important traffic routes since Antiquity.

Built between 1887 and 1892, the Saint-Aubin church is the most recent chapter in a religious history spanning over eight centuries. It succeeds a first medieval church, mentioned as early as 1220, and then the former castle chapel which served as the parish church from 1749. Its elegant neo-Gothic architecture, its original high altar, and its stained-glass windows donated by village families bear witness to the prosperity of Aumes at the end of the 19th century. Fragilized by significant structural cracks, the church has been temporarily closed to the public since November 22, 2024, to ensure visitor safety, pending the necessary work for its reopening. Just a short walk away, the former chapel is still visible and today houses an archaeological museum, recalling that the village has been occupied since the Iron Age. This succession of places of worship makes Saint-Aubin a remarkable testament to the evolution of Aumes through the centuries.

The cooperative winery of Alignan-du-Vent bears witness to wine history. Created in 1936 under the name "Les Vignerons d'Alignan-du-Vent", it was born in a difficult context for small producers, facing the wine market crisis and the need to unite to better promote their harvest.

Pézenas is not just about Molière, even though the playwright stayed there several times between 1650 and 1656 under the protection of the prince de Conti. The city was for a long time one of the most influential in Languedoc: the States of Languedoc met there regularly, and Louis XIII, Richelieu, or the prince de Conti stayed there. While strolling through the narrow streets, keep your eyes open: many doors still retain their original knockers and ironwork, testaments to the skill of Pézenas artisans. A tradition that is perpetuated today by the Musée de la Porte et de la Ferronnerie, unique in France. Finally, one last curiosity: the famous Maison de Molière should not be misleading. Despite its name, there is nothing to confirm that the playwright lived there. Local tradition rather holds that he liked to settle in the barber Gély's shop, where he observed the inhabitants and their foibles, a source of inspiration that is said to have fueled several of his future characters.

Pouzolles did not develop by chance around its castle. In 1556, the inhabitants of the neighboring hamlet of Saint-Martin de Grézan, struck by a plague epidemic, abandoned their village to settle under the protection of the ramparts. The castle chapel then became the parish church, giving birth to the heart of the current village. Even today, the Saint-Martin gate and the old streets built on the ramparts recall this unique history.

A few hundred meters from the village of Castelnau-de-Guers, in the middle of a pine wood, the Saint-Nicolas-de-Talpusiac chapel was built on a hill at the foot of which passes the fishermen's path (cami peissonier) connecting the Étang de Thau to Pézenas. The chapel is mentioned in 1106 under the name "Ecclesiam S. Nicholay de Talpussiac". The name Talpussiac, translated as "Talpussiac's domain", suggests an ancient origin for the site. Archaeological surveys near the chapel led to the discovery in 1992 of the site of a rural settlement from late Antiquity. The current chapel, oblong in plan, and its south and west facades are pierced by a door. It was consecrated in 1819, but is now disused.

This lunar landscape is composed of small mounds of rocks formed by rounded pebbles eroded some 50 million years ago during the flow of waters that covered the region in the Tertiary era.
