Rivedoux-Plage is the cradle of modern oyster farming on the Île de Ré and is a major center for oyster farming. Throughout the island, the work of the approximately fifty oyster farmers is dictated by the water and tidal cycles. Oysters grow in the open sea and can be refined in the marsh (claire). Three years of cultivation are required before they reach our plates. Three years of cultivation require patience and constant attention from the oyster farmer: the vagaries of the weather, the fight against predators, and traditional customs. At low tide, we can see the oyster tables in the water.
